Raw Vegan Brownies

Today’s recipe has changed my life. It may sound exaggerated (and probably is) but it is the truth. This raw brownie is delicious, it is made in 5 minutes and it is also very healthy, what more could you ask for!

It is an ideal recipe to make in summer because it does not need to be baked and it is eaten fresh from the fridge, otherwise it could melt (at least here, which sometimes seems that we are in the Sahara desert).

For a long time we wanted to make a sweet of this style, which was 100% healthy, since it does not contain refined flour, sugar, it is suitable for celiacs, vegans and lactose intolerant. In addition, being raw takes advantage of all the nutrients and properties of the food we are using. It is delicious and it is very very easy to prepare, it has everything!

Depending on the mold you use, your raw brownie will be thinner or thicker, ours was about 2 centimeters thick. I also recommend that you try the mixture before adding the almonds, so if you think it is too bitter you can add more agave.

It is very beneficial to incorporate a large number of raw dishes into our diet (as far as possible) because when we cook food, a large part of its nutrients are lost, although this varies depending on the cooking method we use.

For the brownie to be 100% raw, we should use raw cocoa powder, instead of the roasted cocoa that is usually used in pastries. If you can’t find it or you prefer to use normal cocoa, you will still get one of those desserts that you have to hide if you don’t want to eat non-stop until there is nothing left on the plate, so if you have a sweet tooth, the brownie may not be Enough for 6 people, you have been warned!

  1. In a food processor or blender, add the nuts and grind them until they turn into powder.

  2. Add the cocoa and salt and blend again until they are integrated.

  3. We add the dates little by little because otherwise the blender could get stuck.

  4. Add the 3 tablespoons of agave and stir. It should have a consistency like cake crumbs, but it should be sticky and remain compact when pressed. If it doesn't look like that, you can add more dates (if it's too soft) or more agave (if it's too dry).

  5. Finally, we add the chopped almonds and stir so that they are distributed. You can chop them with a knife into large pieces or if you prefer you can crush them with the robot so that they remain smaller pieces. We like to find almonds so we don't chop them too much.

  6. In a square or rectangular container (we use a 15×20 one) we place plastic wrap or baking paper and pour the mixture. Press with the help of a spoon or your hands to press it and leave it in the shape of a brownie. Put in the fridge for at least a couple of hours. We take it out after that time, unmold and sprinkle with raw cocoa.
